My newly adopted, nervous dog won't eat. What should I try next?

We adopted a dog. He is quite nervous, but very affectionate and loving. We suspect shephard beagle mix. 1 1/2 yrs. The question is we have tried warm cold food. Kibble mixed with moist various dog foods, but she shuns the food. We have had her for 8 days now. Stool seems normal in consistancy and frequency. All else seems normal. Shall we wait it out or might you have any ideas? Pet's info: Dog | Mixed Breed Medium (23 - 60lb) | Female | spayed | 1 year and 4 months old | 56 lbs
