My cat isn't peeing much in the litter box, but acts normal. Why?

I don't think my cat is urinating frequently, but I am not sure. She is eating and drinking like normal, and her poos have been normal. She is acting normal: not licking her nether region or crying a lot. But over the course of the last two weeks, I have only scooped maybe three small balls of urine out of her box! Usually she goes A LOT more than that (daily). Thoughts?

It could be that she is urinating in other places in the home, and that would be my best guess considering she is showing no other signs of illness. Start checking around the house to see if you can find areas where she has peed. If you can't find any and this behavior continues, then I would take her into the vet for a health check.
