Pet's info: Dog | Standard Schnauzer | Male | neutered | 6 years and 5 months old | 19 lbs
My dog has had digestive issues before; uncontrollable diarrhea for no apparent reason after multiple tests. It resolved itself with metronaidizol, propectaline, "ID" and probiotics. It's come back a year later, but I managed to stop it with a bit of fasting and switching to a bland chicken/rice diet...but his poop is now kind of orangey-brown and there was a blob of mucous from the previous poop session. And I wonder if I should be concerned or if this is normal as a result of the diet change?

This is probably not normal but may not be a major concern either, continue with the bland diet for a few days until you see that the stools are back to normal then gradually start him back on his regular diet. Of course if the problem does not seem to resolve, take him to the vet in order to start him on antibiotic treatment again, before it gets really bad.

I wouldn't be worried with the frequency or color of her bowel movements. It is common when on the bland diet for them to go much less frequently. If the stool continues to be soft I would give your vet a call. They may want to screen her for parasites or give you a medication to help with the soft stool to use with the probiotics. Hope aspen is back to herself soon!
