My adopted cat has diarrhea and gas; why aren't home remedies working?

Pet's info: Cat | Domestic Shorthair | Male | 15 lbs

2yr male orange tabby. Diarrhea since adoption 3 weeks ago. No blood or dark stool. Quite smelly. Increased flatulance. Tried probiotics and high-fibre food. Helped firm him up a bit, but not much.

I would have recommended probiotics and diet change but since you already did that I think you have to get him an exam and fecal test. Likely he has either an internal parasite of some sort (coccidia, giardia, roundworms, etc) or he has inflammatory bowel disease. Those would be my guesses off the top of my head but MANY, MANY other things can cause diarrhea in cats. At this point you really need to get some professional help via your veterinarian.
