My kitten is about 6 weeks old. I took him to the vet for a check up 2 days after I got him. He was diagnosed with an eye infection, given erythromycin which we gave him for the full week as prescribed, and his eye is much better. He is still sneezing quite a bit though (up to 10 times a day that I know of). He does sneeze a lot after drinking water, when he is excited/playing, and when he’s nuzzling in the blanket. His breathing seems normal otherwise. Should I be concerned?

No, I wouldn't be overly concerned at this stage if he is eating and drinking and acting fine. Just monitor him and if he gets a crusty nose, has discharge from the nose, stops eating, etc then have your vet check him. This is probably a mild upper respiratory and he will hopefully resolve it on his own.
