Pet's info: Dog | English Pointer | Male | neutered | 50 lbs
My dog has been drinking excessively the past month and I just noticed that his penis has lost its pink/red tone and is now much lighter in color.

I am not sure that those two problems are related but they could be. Anemia can cause a paler appearance to the gums in the mouth and the penis. Anemia can be due to autoimmune disease, kidney disease or some type of parasite. Anemia is easy to diagnose with a simple blood test that your vet can do. As for the drinking lots of water. That is most concerning to me. This is called polydipsia and is usually a sign of an underlying endocrine disease like diabetes or Cushing's disease but it can also be due to kidney or liver disease. Most of these problems, again, can be ruled in/out with some simple blood testing. I suggest you get Bennett to your vet for an exam and blood testing as a staring point. Hope this helps. Best wishes.
