Could my cat be peeing a bit more often because the weather is getting much colder?

Changes in temperature is not expected to cause changes in urination. Many times, changes in urination indicate a bladder infection, crystals in the urine or something like kidney disease. I recommend to have Sofia examined by the veterinarian to check for any potential problems. I hope this helps and please feel free to post any additional questions.
