What can I feed my Russian tortoise for a healthy, varied diet?

Hello, I’d like to take proper care of my Russian tortoise and I’d like to vary its diet but have no idea what I can feed it with. It’s 12 years old and really likes sunflower shoots but I know they’re not enough. I feed it with fruit from time to time. It mostly eats rocket. I’d be grateful for any advice.
