What western saddle gullet size does my horse need for barrel racing?

Pet's info: Farm Animal | Horse | Female | spayed | 8 years and 4 months old | 900 lbs

You might not be able to answer this, by maybe you can tell me who can? I have a English Saddle That’s has a 8.5” Gullet that fits lexus, but i am looking into getting a western saddle. Would a 7” Gullet with Full Quarter Horse Bars Fir her properly ? I can’t try the saddle before i purchase so measurements are all i have. Is there a way to figure out what gullet size i need for a western barrel saddle ? Thank you !
