My anxious senior dog won't eat when I'm gone. What should I do?

I am going away for a month and my dog jasper has bad anxiety. I tried leaving him with a foster but had to pick him up because he stopped eating and drinking. He was very depressed. What do i do. How can i leave him if hes going to.be like this ? He is a miniature sheltie and hes 11. Pet's info: Dog | Shetland Sheepdog | Male | unneutered | 11 years old | 15 lbs
