So my cat is pooping and peeing on the counters and I'm getting tired of it. Is there anything I can use to discourage her from using these spots? Is there any type of chemical? Spray?

Gucci should be examined by your veterinarian to diagnose any medical causes for her behavior. Once that is done, you can focus on behavioral issues. Restrict access to counters if possible. Provide an additional litterbox and use a litterbox attractant to entice her back into the box. A product like the ScatMat can be used to keep her off countertops. It will deliver a tiny static charge to discourage her. A carpet runner placed upside down (pokey side facing up) can also deter her from getting up on countertops. Use an enzymatic cleaner, such as Nature's Miracle, to thoroughly clean soiled areas.
