I was stupid and left a bowl with wet food sitting out for a few days. When I emptied it today it had dried out but there were maggots under the dried out layer. Should I be concerned that my cat may have eaten some of them?

Cats can be finicky eaters, and I don't imagine that Cassie would eat dried out wet food, especially if she had another source of food to eat. I wouldn't be concerned that she has eaten maggots. Best of luck.
