How can I get my cat to stop scratching at the bathroom sink and mirror at night. I have tried putting him outside right after and have also tried the water bottle trick and he still doesn't get it.

The simplest option would be to simply close the bathroom door at night so that he doesn't have access to the sink and mirror. Cats often like to scratch on things or make noise during the night, and it's extremely difficult to train them not to do it - far easier in most cases to just block their access to the problem areas :)
