My dog may have been exposed to a dead skunk. Do we need to quarantine our dog until she is seen by the vet? We have two small children and are nervous about rabies exposure...

No, there is no need to quarantine Ellie. Rabies only passed via a bite from an infected animal, and since the skunk was dead, there's no way she could have gotten a bite from the skunk. It's always good, however to make sure your dog is up to date on all her vaccines, including rabies :-)
