My dog was diagnosed with an aggravated pancreas. He has been on a bland diet for 5 full days now. He's eating, drinking, peeing, and pooping good. But still acts like he's in pain and wants to lay around? Moaning a little. Is this normal? When do I know he should be checked out again? I'm not sure how long this recovery could be.

You will need to take your dog back to the vet for a recheck. The veterinarian should prescribe pain medicine for your dog. If he has not had an ultrasound exam yet, this may be the time to have one, in order to check out whether he has an abscess or tumor on his pancreas. By now he should not be in pain anymore, especially since his body functions have returned to normal (no vomiting, no diarrhea, and eating and drinking.).

Pancreatitis is quite a serious inflammation of the pancreas, and your dog's body will be tired from the disease. He does need time to rest and heal up from it, so some lethargy can be expected. If you are concerned that he is very lethargic, however, then that isn't to be expected and I would call your vet to see if they want you to bring him back in for a health check.
