What are the sign and symptoms of yeast infection of internal organs ? At what age this yeast infection can infect dogs usually?

I have never heard of a dog getting a yeast infection of the internal organs - this would be incredibly rare, and just does not happen in my experience. Dogs can get fungal infections like blastomycosis, histioplasmosis, or aspergillosis but these are very specific to certain parts of the country.

    A weak immune system and in some cases bad quality food can contribute to internal yeast infection (candida), it can also occur after a long steroid treatment for example, but it is not very common in dogs and it's a different type of yeast than the one found on the skin and ears.
