My 9 year old Brittany has loose stools/diarrheasurrounded by a mucas membrane substance. In addition the pigment in certain areas of his coat is changing from his normal liver color to a light brown color. He has a good appetite and normal energy level, He does suffer from anxiety when left alone.

Loose stools with a lot of mucous often indicate a Giardia infection, or colitis (irritation of the colon). You can try to feed a bland diet of boiled chicken and cooked rice for a few days and see if that helps. I recommend taking him to the vet if any of the following happen: 1) Blood in diarrhea 2) Very watery diarrhea 3) Dog starts acting very depressed 4) Dog stops eating or drinking for longer than 24 hours. 5) Diarrhea lasts longer than three days. The spots changing color is not concerning. This happens normally as they age. As long as the coat and skin are still healthy appearing (shiny and soft as seen in the picture), then I would not be too worried. If you do see the coat getting more dry, flaky and brittle, then it's best to have your vet evaluate him for potential conditions that can cause this. I hope that helps and Prince gets better soon.
