I believe my cat has a case of sudden blindness in both eye is it better for her to have all lights off at night or a little light , so that way she can still Find her way to her water and food, or will she be better off with no light (like a bat)

If your cat is completely blind, then it won't make a difference if there is any light or no light. If she still has some vision, then some light will help her. Some causes of blindness are reversible in cats if treated immediately, so I would strongly recommend taking her to your vet ASAP to see if her blindness is treatable and reversible.
