How to train a stubborn 10-year-old cat when old methods fail?

Is there any other way to train a stubborn old cat, he's about 10 and seems to never get the hint. since he was two I've tried using spray bottles, treats, and even bonking him in the head on his butt (gently of course). Nothing has worked. Pet's info: Cat | American Shorthair | Male | neutered | 20 lbs
