I am not sure what you are feeding but you should pick a high quality food that is easily to digest. Some of the lower quality foods will cause dogs to defecate more because the food is not very digestible. If he is having diarrhea then have your vet test a fecal sample for parasites.

It does sound like your dog has intestinal worms if he's eating his poop all the time and he's not gaining weight. He will need a deworming treatment, I recommend Panacur. You can find it online and in pet stores. He will need two courses of treatment two weeks apart, and then will need a treatment every three months to prevent worms from coming back. It this doesn't help his symptoms, then you will need to find the closest vet to you to see him.

It may just be habit, that he appears hungrier. Since he is a healthy weight, he is obviously getting enough to eat. Try feeding him his daily ration over three feeds a day. This may keep the hunger away. Should he lose condition or get thinner, you should make an appointment with your veterinarian for a wellness exam. Worms usually are not visible in the stool unless there is a huge rate of infection. So he could still have worms and worming him won't hurt. You can also take a fresh stool sample to your vet for a fecal exam.
