When should I start packing for a trip to avoid stressing my cats?

Pet's info: Cat | Mixed Breed | Female | spayed

I am going away for three weeks at the beginning of July. My two cats associate the going away with the big bag that I take out of the cupboard. Must I take out the bag three weeks before I leave so that they can get used to the idea, or is it better for them to realize the day before I leave? They stay with my son in the house while I'm gone.

I would take the bag out right before you are supposed to leave and start packing. There's no need to take it out so far before your trip, and it may cause added stress and anxiety to Zorra and Nova.
