my 5 year old female/fixed cat has just started in the last 2 weeks, biting my hand. She only bites when we are laying in the bed together at night. (it is not all the time, I never know if she is going to bite or not) but it's either when we're in bed and I'm petting her, or sometimes when I am sleeping. She has never bitten before the last 2 weeks, and it's only in the bed that she bites

Some cats start biting because they are overstimulated by petting, or are trying to warn you that they have had enough attention. I would stop petting her before you bite her, so you can stop this behavior before it becomes a pattern.
